Classic Ratatouille

I made this for the Sept ‘07 potluck with all the great vegetables from my food share from the Owen Sound market. Simple, no skill required! I put the leftovers in a pot, added a bit of water, and pureed with a handblender for instant soup. Also a quite tasty meal!

Choco-Banana Mini Muffins (No Grain No Dairy)

Ingredients
2.5 cups ground nuts (almonds, walnuts, flax seeds, etc.)
1/4 cup coconut butter (partly replaced by butter may taste better)
1/4 cup raw honey
3 eggs

Green Pea and Cauliflower Salad

Ingredients
1 bag of frozen peas
1 head of cauliflower, broken into small flowerettes
1/2 cup hot banana pepper rings, chopped
1/2 cup mayonaise
1 cup sour cream

1 pint grape tomatoes, halved
1 cup mini fresh mozzarella balls, halved
1/3 cup minced red onion

Marinated Green Beans

Ingredients
Green beans
Sweet red pepper
Crushed garlic
Extra virgin olive oil
Balsamic vinegar
Directions
Boil or steam green beans, so they’re still a bit crunchy. Chop sweet red pepper in small chunks. Add red pepper and crushed garlic to cooked beans. Moisten with 1/2 olive oil and 1/2 vinegar. Served chilled or at room temperature. Cheers!
