Holy Guacamole!

Not quite the same as some of the great places we discovered in Mexico, but pretty darned tasty for something you can make in about 5 minutes!

Ingredients
1 large avocado, ripe
1 tsp onion, finely chopped (or more to taste)
1 clove garlic, finely chopped (or more to taste)
1 tbsp lime juice (or more to taste)
1 tsp flaxseed oil
sea salt to taste

Directions

Cut avocado in half, scoop out into bowl and mash with a fork or potato masher. Add remaining ingredients and mix well. (Can make chunky or smooth depending on preference.) Serve with baked tortilla chips or veggie crudités. Makes ~ 1 cup.

Nutritional Value of Select Ingredients

Avocado – High in mono-unsaturated fatty acids, it contains 20% fats – all good ones. High in potassium, vitamin E, B vitamins, and fibre, avocados can help normalize cholesterol levels.

Onions – Because they are high in sulfur, onions help lower cholesterol, inhibit cancerous tumor growth, help manage diabetes, and are an anti-inflammatory, antibacterial, and antifungal food that are also a blood tonic. Eat them daily – raw or cooked.

Garlic – Garlic is touted as a “cure-all” due to its many uses in medicine. It has a beneficial effect on heart disease, cancer, and infectious diseases. It decreases cholesterol levels, detoxifies the body, stimulates the immune system, and the list goes on and on. Eat garlic raw and regularly for maximum benefits.

Limes – The phytochemicals in limes boost the immune system, prevent heart disease and cancer, lower blood cholesterol levels, and lower high blood pressure. They may dissolve gallstones and protect against scurvy, as they are high in vitamin C.

Flax oil – Flaxseed oil is one of the richest sources of omega 3 fatty acids, the type of fats that are deficient most people’s diets. It can aid in reducing cholesterol and slow the progression or rheumatoid arthritis and atherosclerosis.
